Ingredients
  

Strawberry Jam

  • 2 cups fresh strawberries diced
  • ½ cup granulated sugar
  • 2 tbsp lemon juice

Strawberry Syrup

  • 1 cup water
  • ½ cup strawberry juice or blend fresh strawberries and strain
  • ¼ cup granulated sugar

Mascarpone Filling

  • 1 ½ cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Ladyfingers and For the Top

  • 8 oz ladyfingers store-bought or homemade
  • ½ cup fresh strawberries for garnish
  • Optional cocoa powder for dusting

Instructions
 

Strawberry Jam

  • Combine diced strawberries, sugar, and lemon juice in a medium saucepan over low-medium heat.
  • Stir frequently and simmer for 12–15 minutes until the mixture thickens.
  • Remove from heat and allow to cool completely.

Mascarpone Filling

  • Beat the mascarpone cheese in a bowl until smooth.
  • Whip heavy cream with powdered sugar until stiff peaks form, then gently fold into the mascarpone.
  • Mix in vanilla extract for additional flavor.

Strawberry Syrup

  • Combine water, strawberry juice, and sugar in a small saucepan.
  • Heat over low-medium heat, stirring until the sugar dissolves.
  • Remove from heat and cool.

To Assemble

  • Dip each ladyfinger into the strawberry syrup (but don’t soak them too long).
  • Lay the dipped ladyfingers in a single layer in the dish.
  • Spread a layer of mascarpone filling over the ladyfingers.
  • Add a layer of strawberry jam on top.
  • Repeat the layers until the dish is filled, ending with a layer of mascarpone.

To Serve

  • Cover the dish and refrigerate for at least 4 hours or overnight.
  • Before serving, garnish with fresh strawberry slices or cocoa powder.

Notes

  • Make it ahead: Strawberry tiramisu gets even better with time. Prepare it the night before serving to enhance the flavors.
  • Swap the strawberries: If strawberries aren’t in season, try using raspberries or peaches as a substitute.
  • Adjust sweetness: Balance the dessert's sweetness by adding more or less sugar in the syrup.
