Strawberry Jam
- 2 cups fresh strawberries diced
- ½ cup granulated sugar
- 2 tbsp lemon juice
Strawberry Syrup
- 1 cup water
- ½ cup strawberry juice or blend fresh strawberries and strain
- ¼ cup granulated sugar
Mascarpone Filling
- 1 ½ cups mascarpone cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
Ladyfingers and For the Top
- 8 oz ladyfingers store-bought or homemade
- ½ cup fresh strawberries for garnish
- Optional cocoa powder for dusting
Strawberry Jam
Combine diced strawberries, sugar, and lemon juice in a medium saucepan over low-medium heat.
Stir frequently and simmer for 12–15 minutes until the mixture thickens.
Remove from heat and allow to cool completely.
Mascarpone Filling
Beat the mascarpone cheese in a bowl until smooth.
Whip heavy cream with powdered sugar until stiff peaks form, then gently fold into the mascarpone.
Mix in vanilla extract for additional flavor.
Strawberry Syrup
Combine water, strawberry juice, and sugar in a small saucepan.
Heat over low-medium heat, stirring until the sugar dissolves.
Remove from heat and cool.
To Assemble
Dip each ladyfinger into the strawberry syrup (but don’t soak them too long).
Lay the dipped ladyfingers in a single layer in the dish.
Spread a layer of mascarpone filling over the ladyfingers.
Add a layer of strawberry jam on top.
Repeat the layers until the dish is filled, ending with a layer of mascarpone.
To Serve
Cover the dish and refrigerate for at least 4 hours or overnight.
Before serving, garnish with fresh strawberry slices or cocoa powder.
