Ingredients
  

  • 1 ripe banana
  • ¼ cup 40g brown sugar
  • 3 tbsp 40g melted butter or neutral oil
  • 1 egg or egg substitute
  • 1 tsp 5ml vanilla extract
  • ¾ cup 90g plain flour
  • ½ tsp 3g baking powder
  • ¼ tsp 1g baking soda
  • Pinch of salt
  • ¼ cup 50g chocolate chips

Instructions
 

  • Preheat oven to 180°C (350°F). Line or grease six muffin cups.
  • Mash the banana in a bowl. Add brown sugar, melted butter, egg, and vanilla. Mix well.
  • Combine the flour, baking powder, baking soda, and salt in another bowl. Fold the dry mixture into the wet ingredients until just combined.
  • Stir in chocolate chips. Fill muffin cups evenly, sprinkle with reserved chips, and bake for 18–20 minutes.

Notes

For a nuttier twist, stir in chopped walnuts or pecans!
