Red Velvet Cookies
- 1 box red velvet cake mix
- 1 teaspoon baking powder
- ⅓ cup vegetable oil
- 2 large eggs room temperature
Cream Cheese Filling
- 4 ounces cream cheese softened
- ¼ cup salted butter softened
- ½ teaspoon vanilla
- 2 cups powdered sugar
- 1 tablespoon milk

Preheat the oven to 350 degrees Fahrenheit and prepare baking sheets by lining them with parchment paper.
In a large bowl, combine red velvet cake mix, baking powder, vegetable oil, and large eggs. Mix on medium speed until all the ingredients are well combined.
Use a cookie scoop to place about 2 tablespoons of dough onto the baking sheets, leaving 2 inches between each cookie.
Bake for 10-12 minutes, until the edges are set. The middle will look underbaked, but that’s fine. Let the cookies cool on the tray for 4 minutes before transferring to a cooling rack to finish cooling.
Cream Cheese Filling
In a large bowl, combine cream cheese and salted butter. Use a hand mixer on medium-high speed to blend until smooth and combined.
Scrape down the sides of the bowl and add vanilla, powdered sugar, and milk. Mix on low speed until the sugar is mostly absorbed, then increase to medium speed to beat until fluffy and smooth.
Spread or pipe a tablespoon of frosting onto the bottom of one cookie, then sandwich another cookie on top. Press gently so the filling reaches the edge of the cookies.
Repeat with the remaining cookies, ensuring you have 18 completed sandwich cookies.
